Xativa gastronomy
Xátiva's gastronomy is very rich, varied, traditional and healthy. It is typically Mediterranean (the Mediterranean diet is since 2013 Intangible Heritage of Humanity), where vegetables, vegetables and fruits are of local origin.
Rice is the main ingredient in many typical dishes, rice broths, rice in fesols i naps, rice blanquet, not to mention paella, which in Xátiva is cooked with abundant meat, legumes and vegetables. The most typical dish of Xàtiva is “la cassola d'arròs al forn”.
The Muslims, who for centuries inhabited these lands, left their mark on both the main dishes and the way they were prepared and desserts. From an anthropological point of view, the gastronomy of Xàtiva is a gem, for the fusion that many dishes reveal the Arab origins and ancestral traditions
With regard to desserts, we highlight some such as: “el Torró de Gat”, “los Pastelitos de Boniato” and las “Monas”. A mandatory reference is the Arab-influenced sweets - the “Arnadí”, a dessert originally from Xàtiva, which has been passed down from generation to generation, is a typical sweet made with pumpkin and almonds – its heritage from the times of Al-Andalus is revealed, as it is very elaborate and aesthetically striking, reminiscent of a tajine (typical Arabic casserole). Another sweet of Arab origin is “Almoixàvena”, with simple preparation and ingredients: eggs, flour, sugar, cinnamon and butter.
